Grankaz is the epitome of Seychelles rum, showcasing Takamaka’s ageing and blending craft. Traditional pot distilled Seychelles cane rums, aged for eighteen & forty-two months in medium-toast new French oak, are blended with a three-year-old ex-bourbon molasses rum and an eight-year-old Bajan Foursquare molasses rum.

The full proof blend is rested in stainless steel prior to a slow dilution using Seychelles spring water . The process of slow dilution combined with the low TDS water and a very coarse pre-bottling filtration allows for the different congeners to fully express their aromatic potential even at final bottling strength.

Bottled at 45.1% ABV, no sugar or colouring is added and it is only very lightly filtered. Herbaceous and slightly floral on the nose, there are gentle hints of vanilla, followed by silky and smooth stewed fruits and butterscotch characters. The layers of complexity give way to a long finish with notes of toasted oak.

So our rum starts with our local Seychelles Cane rum. The cane of which all is grown locally on Mahe is crushed, fermented and distilled all on-site at La Plaine St Andre. This rum is made up from 3 main components – French Oak Cane rum, Ex-bourbon Molasses rum and Bajan 8 year old.

Firstly to the new French oak cane rum. For this first release of Grankaz we used two different casks. The first was a Medium Toast 500L where the rum has aged for 18 months. The cask was filled with rest cane rum at 60% abv. This element made up 10% of the total full proof blend

The second new French oak cask was also Medium Toast and 500L – but here we had let the rum age 42 months in the cellar below the historic homestead. The cask again was filled with rested cane rum at 65% abv and constituted 15% of the full proof blend.

The next component was molasses rum aged in ex-bourbon casks both 1st and 2nd fill and aged for 36 months. This was a homogenization of a variety of casks from Buffalo Trace, Four Roses and Jack Daniels. This element amount to 30% of the final full proof blend.

Finally – we looked to Foursquare where we used an eight year old rum for 45% of the total blend.

A very slow dilution of 0.5L/H using our own water source which we further reduced the solids to only 3 ppm.

We then let the whole blend just be as one in stainless steel for 8 months prior to bottling!
