Aged spirit takes time and is always a bit of gamble at the start. As a relatively young distillery - we for sure had some challenges. Part of the growing pains is you never know before you know what rums will work in what casks. In some cases we got lucky - our cane rum just worked in Port cask.

But when it came to crafting out top two expressions - we started with a few guiding principles. Firstly - we were adding nothing - no sugar, no colour. Secondly - we wanted to keep it 100% aged rum.

Traditional pot distilled Seychelles cane rum from three different barrels - including one ex ruby port and two French oak casks - is blended with column distilled molasses rum that’s been rested for three years in ex-bourbon casks, as well an eight-year-old Bajan Foursquare molasses rum.

The full proof blend is then rested in steel tanks prior to a very slow dilution using Seychelles spring water.

A very coarse filtration to just remove solids such as charred oak pieces from the casks. 

Bottled at 45.1% ABV with no colour or sugar added, and non-chill filtered, this rum is full of rich fruity notes of star anise and dried cocoa beans, with a complex finish full of dry spice.

The cane rum which makes up 20% of the full proof blend cam equally from two very different cask styles. The first was the ex-Ruby Port casks – these small 225L having aged our rum for 42 months produced an outstanding rich liquid.

The second component was from a blend of two different new French oak Radoux casks. A Medium Toast + 500L and a Medium Toast + 225L – again – both having aged 42 months having been filled with the same batch of liquid as the Port.

Using the same homogenized ex-bourbon molasses rum that is used in Grankaz – this time however it made up 65% of the total blend.

This was then combined with Bajan 8 year old Foursquare – making up the final 15% of the blend.

Next is a course 10 micron filter and then our water which we have further reduced the TDS to just 3PPM is used with a very slow dilution of 0.5L/H prior and then the finished rum is rested for 8 months in stainless steel tank prior to bottling.
